Salmon Patties

There’s always canned salmon in my pantry for a quick and healthy meal. Salmon protects your heart and promotes beautiful skin and hair. The bones in canned salmon are soft and mash-able so leave them in to add calcium but I remove most of the skin. Any toxins in fish are stored in the skin. - Jenny Jones

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Makes: 4

Best Salmon Patties Recipe, Salmon Cakes | Jenny Can Cook (1)

Ingredients:

  • one 7.5 ounce can red salmon, drained
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced red bell pepper
  • 1 Tablespoon chopped fresh parsley
  • 1 egg
  • 1/2 cup fresh whole wheat bread crumbs (not dried)
  • 1 teaspoon olive oil

Instructions:

  1. Place drained salmon in a bowl and mash with a fork.
  2. Mix with onion, red pepper, parsley, egg, and crumbs.
  3. Shape gently into four patties.
  4. Heat oil in a pan over medium heat and cook patties for about 5 minutes until browned and cooked through, turning once.

Note: Make fresh bread crumbs by processing a slice of whole wheat bread, crust removed, in a food processor.

    This is the single best recipe for salmon I have ever eaten let alone made 10 star recipe here! I’ve made it like 5 times!
    The only reason I don’t eat it more is because my husband is not fond of seafood.

            Canned salmon is already cooked so you must use cooked salmon for this recipe.

                          I keep broken wild rice in my home. It cooks up faster than whole wild rice and I love the texture. It is finer. I wonder if you could use that. I don’t know if you should just throw it into the mixture as is first or cook it first. I think I would try cooking the rice first or cooking it until almost done before adding to the mixture.

                                Fantastic! Made these last night because of “stay at home” order and trying to use only/mostly pantry items. I didn’t have red pepper, so used minced celery and added cajun spices (onion and garlic powders, thyme, cayenne and smoked paprika). Didn’t need any toppings, and were crispy on the outside and just moist enough on the inside. I used a tall can of wild salmon so doubled the bread and egg. Made the mix in advance and fried them up at last minute. Served with coleslaw. Will make again, even after the quarantine is lifted! Thanks, Jenny!

                                I make these often and follow Jenny’s recipe exactly except that instead of bread crumbs I use 4-5 large wheat crackers which I always keep in the pantry and just crumble into the mix. More flavor. Sometimes I add a can of tuna to the mix to make more and we eat them again the next day for lunch! I also top them with a sauce of plain yogurt, chopped bread butter pickles and horse radish. YUM!

                                Tried this for first time tonight and had to leave a comment. We loved it, was very simple to make and 4 children ages 6~10 also gobbled them up and commented how “pretty” it was. (Also served with applesauce).                                 I loved this recipe….thank you, but I switched it up a bit.
                                Cooked some frozen basa fillets with a splash of white wine, lemon juice & old bay seasoning, then mixed it up with bread crumbs, pepper, parsley, garlic, dehydrated onions and some parmesan cheese. Pan fried….It was delicious!!! Great comfort food.

                                Omg! Just made these for lunch and they were delicious. I added a little diced celery and some fresh ground lemon pepper seasoning then served on a bed of jalapeño ranch dressing with some crackers. Wish I had taken a photo but they were too good to wait for that… yum!

                                These are delicious Jenny! It was my first time ever making salmon patties. I laugh because I once bought an expensive can of salmon, opened it up and it freaked out because it had bones and skin. I tossed it because it looked horrible! I thought it was an mistake. Now, thanks to you I know. For this recipe I actually some frozen salmon filets I had in my freezer. I didn’t want to waste them but I didn’t care for the brand to eat them plain. So I cook them in the pressure cooker and then made the patties. Loved how simple and clean the ingredients are. I served mine with a dill pickle dipping sauce and a side of roasted asparagus. The best! I will definitely make them again. Thank you.

                                These are delicious and oh so easy. I also make something similar using canned tuna instead of salmon. The recipe is very forgiving. Like others, I use whatever fresh veggies I have available — minced onion, minced celery, minced carrot, any color bell pepper,

                                Sometimes I make a Tziki-type sauce to put on top: No measuring — mix together sour cream OR plain, non-fat yogurt, finely chopped, peeled cucumber, and a large sprinkling of dried dill. Fresh dill is wonderful in this also. Mix together and put a dollop on top of each patty. This sauce is good on any baked or broiled fish.

                                    Another option for an egg replacement is flax seed mixed with water. It becomes a gel texture so it binds nicely. Check Google for measurements. ?

                                    Mixing 1 teaspoon (7 grams) of baking soda with 1 tablespoon (15 grams) of vinegar can replace one egg in most recipes.

                                    My mom used to cook this for our family when I was home, I’ve cooked this for my family and now my boys cook for their families. I also have used canned Mackeral. It is a lot cheaper than Salman and doesn’t have such a fish scent. I prefer the RED SALMON which is a treat

                                    Encouraged by everyone’s comments, I attempted the salmon burgers tonight. However, I couldn’t get them to stay in patty form (second egg needed perhaps?) so I ended up just scrambling them in the pan, the way I do with hamburger meat when I’m too lazy to make actual burgers, & ate the concoction with a spritz of a lemon wedge. It was ok….not the best.

                                        I just made these today for the first time and they were delicious! I froze some of the patties for future use. I love that they are so easy to make, inexpensive and so healthy! I love this website. Thank so much Jenny for sharing your recipes with us. I have made a number of the recipes offered on this site and none of them have been disappointing. Finally, a cooking site that doesn’t make me work like a Michelin chef.                                           Just made the patties — sort of. I don’t know what it is about the impulse to change recipes. I thought I was the only one, but am discovering it’s not so.

                                          I didn’t have the red pepper, so I used celery. Didn’t have whole wheat bread, so used Panko.

                                          Added a small clove of garlic. Life is not life without garlic!

                                          They held together just fine.

                                          Tastes good, though I think I can improve on it.

                                          I LOVE how easy and quick these are to make. I also love that you can vary them, according to what you have on hand.

                                          What a great recipe to work with or work off of.

                                              I use garlic in just about everything
                                              except fruit and sweets! A little goes a long way, sure enhances the flavors… I’ve started using lemon pepper on my meats and vegetables… It has alot of garlic in it, never new that, used to think it only contained lemon and pepper… Learn something new everyday ??‍♀️

                                              I followed the recipe except I did not have fresh parsley so left it out and I added a Tablespoon of grated and minced carrot because I had it and I sprinkled some Montreal Steak Seasoning on the salmon. I used 2 eggs and a cup of fresh soft bread crumbs because I had a 14.5 oz can of salmon, however I did use 1/4 cup minced onion and 1/4 cup red bell pepper minced and cooked until they were soft.

                                              I cooked the patties in butter and they were the best we have ever had.

                                              To have red bell pepper on hand I clean and seed the pepper, make thin “sticks” and mince the pepper. I lay them on foil or wax paper and freeze then put in a zip-loc bag so I always have bell pepper when I need it and it cuts down on waste. I also cook my onion and pepper (and garlic) enough to soften for salmon patties.

                                                          I remember my mother making these but I don’t remember the recipe. I do know that the ‘bread crumbs’ were crushed saltine crackers and the white sauce was the Argo Cornstarch White Sauce recipe.I would like to find this recipe also. I am finding that my childhood memory of tastes are different from my adult tastes of the same recipe. 😉

                                                            Old Easy Salmon Croquettes – Plain – Not Fancy

                                                            1sleeve Saltine crackers crushed
                                                            2eggs
                                                            1can salmon – 14.75 ounce
                                                            x small onion diced

                                                            Classic White Sauce

                                                            A classic sauce. Use as is or add cheese, vegetables, dried beef, chicken, etc.
                                                            Quick Facts
                                                            Prep Time: 5 minutes
                                                            Cook Time: 5 minutes
                                                            Yield: 1 cup
                                                            Ingredients

                                                            1 tablespoon Argo® Corn Starch
                                                            1 cup milk
                                                            2 tablespoons butter OR margarine
                                                            1/4 teaspoon salt
                                                            1/8 teaspoon pepper

                                                            Directions

                                                            Stove Top: Combine corn starch and milk in a small saucepan; stir until smooth. Add butter, salt and pepper. Stirring constantly, bring to a boil and boil for 1 minute. Remove from heat.
                                                            Microwave: Combine corn starch and milk in a 2-quart microwave-safe bowl; stir until smooth. Microwave on HIGH (100%) for 2 minutes; remove and stir. Microwave 1 to 2 minutes more, or until mixture thickens and boils for 1 minute. Remove from microwave. Stir in butter, salt and pepper.
                                                            Makes a delicious, creamy sauce for vegetables, casseroles, chicken or seafood.

                                                              I make my Salmon Patties somewhat like yours but never added the red pepper but will make that change. i make the white sauce like yours only i add green peas either frozen and thawed or steamed. Serve it over the patties. It makes a nice flavor and looks pretty.

                                                              The Argo white sauce recipe most likely can still be found outside of the Argo cornstarch box.

                                                              Loretta Lynn made a ‘Shrimp Croquette’ recipe years ago w/ a white creamy sauce on top. You can find it online.

                                                              Loretta Lynn has a recipe online I found 30 yrs ago for I think shrimp croquettes. I would follow that & sub the salmon. Good luck!

                                                                Salmon patties , the whole bread can be used. The whole Salmon
                                                                Can be used ,because the process that the salmon and canning goes
                                                                Thru kills the toxins.

                                                                Hi Jenny, Love your channel – especially the Polish food. We’ve made so many of your recipes! I’m sure you’ve heard this over and over, but the salmon patties is an OUTSTANDING recipe. Beats my grandmother’s hands-down. I sometimes add a bit of jalapeño for heat; other than that; it’s perfection as-is. We make extra to have cold the next day. YUM and THANKS.

                                                                Just made these salmon patties tonight. My husband and I thought they were delicious!! Thank you Jenny for sharing this recipe with us. Although I didn’t have any red pepper to put into the salmon, they still turned out so very good. I’ll make these again! Again, thank you Jenny.
